claire's cookies 

This a really simple and easy cookie recipe which is infinitely customisable. Want cookies with nuts in? Chocolate chips? Bake 'em your way.

175 g of butter/margarine at room temperature
175 g of caster sugar
225 g of self raising flour - take out a tablespoon and in cocoa powder instead if you want chocolate cookies 
Extras - add what you like to the basic dough. Chocolate chips, nuts, raisins, chopped up dime bars etc (around 100g should do the trick). 

Grease two baking trays with butter/margarine, and turn the oven on to 180c / Gas Mark 4. 

Mix together the first three ingredients - the dough will be really floury right up until it has been mixed for a couple of minutes. Add a bit of milk if it doesn't start sticking together. 

Next add the extras like chopped up chocolate and mix again. 

Make balls of the cookie mixture, flatten them and put them on a baking tray in the oven for about 10 minutes. 

Leave space between the balls, as they will expand as they cook. 

Makes 14 large cookies.
