brack / easy tea loaf 

This is a really easy, quick fruit loaf which contains no fat. Just remember to soak the fruit overnight before you make the cake. 


425g dried fruit (use a dried fruit mixture, dates, apricots, currents - whatever you prefer)
175g Demerara sugar
150 ml hot black tea
225 g / 8oz self raising flour.1 egg (medium) 

Mix together the dried fruit, sugar and hot tea. 

Cover and leave overnight.

Heat the oven to 160c / 325f / gas mark 3. Grease and line a 1kg (2lb) loaf tin.

Add the egg to the dried fruit mixture, and beat it in well.

Next stir in the flour.

Put the mixture into the loaf tin and bake it for about 1½ - 1¾ hours until firm.
